Watermelon, Burrata & Berry Salad with Balsamic Glaze

Ingredients
1 small seedless watermelon, cut into large cubes
4 fresh burrata balls (or fresh mozzarella)
1 cup fresh blackberries
1 cup fresh raspberries
1 ripe nectarine or peach, sliced into wedges
¼ cup shelled pistachios, roughly chopped
2 tbsp pumpkin seeds (optional)
Fresh mint leaves
Fresh thyme sprigs
2 tbsp extra virgin olive oil
3 tbsp balsamic glaze
Sea salt, to taste
Freshly ground black pepper, to taste
Instructions
Arrange the watermelon cubes in a neat row on a serving platter.
Place one burrata ball on top of every few watermelon cubes.
Scatter the blackberries and raspberries around and over the burrata.
Add the nectarine slices for sweetness and color.
Sprinkle the chopped pistachios and pumpkin seeds evenly over the salad.
Garnish generously with fresh mint leaves and thyme sprigs.
Drizzle with extra virgin olive oil, followed by the balsamic glaze.
Season lightly with sea salt and freshly ground black pepper.
Serve immediately while the burrata is fresh and creamy.
